Apple Custard Crumble is a cozy dessert featuring warm, tart apples topped with a creamy, dreamy plant-based custard and a delightfully crunchy oat and nut crumble topping. Easy to make and wonderfully comforting, this dessert is perfect for sharing or enjoying as a special treat any time of year.

Ingredients

Scale

Apple Mixture

  • 4 crisp tart apples (such as Granny Smith), peeled, cored, and sliced evenly
  • 2 tablespoons brown sugar (natural)
  • 1 teaspoon cinnamon (natural)
  • 1/4 teaspoon nutmeg (natural)

Plant-Based Custard

  • 2 cups plant-based milk (such as oat or almond)
  • 3 tablespoons cornstarch
  • 1 teaspoon natural vanilla extract
  • 3 tablespoons brown sugar (natural)
  • 1 teaspoon natural gelling agent

Crumble Topping

  • 1 cup oats (certified gluten-free if needed)
  • 1/2 cup chopped nuts (optional; walnuts, almonds, or pecans)
  • 2 tablespoons brown sugar (natural)
  • 1 teaspoon cinnamon (natural)
  • 4 tablespoons plant-based butter, chilled and cubed

Instructions

  1. Prepare the Apples: Peel, core, and slice the apples evenly. Toss the apple slices with brown sugar (natural), cinnamon (natural), and nutmeg (natural) until well coated. Spread the apple mixture evenly in a greased baking dish.
  2. Make the Plant-Based Custard: In a saucepan, whisk together the plant-based milk, cornstarch, natural vanilla extract, brown sugar (natural), and natural gelling agent. Cook over medium heat, stirring constantly until the mixture thickens into a smooth, luscious custard. Pour the custard gently over the apples in the baking dish.
  3. Prepare the Crumble Topping: In a mixing bowl, combine oats, chopped nuts (if using), brown sugar (natural), and cinnamon (natural). Add chilled plant-based butter cubes and use your fingers to pinch and crumble the mixture until it resembles coarse crumbs. Sprinkle the crumble topping evenly over the custard layer.
  4. Bake to Perfection: Preheat the oven to 180°C (350°F). Bake the assembled dish for 35 to 40 minutes until the topping is golden and crunchy and the custard is set but still creamy. Let the dessert cool slightly before serving to allow flavors to meld.

Notes

  • Use tart apples such as Granny Smith for a perfect balance of sweet and tart flavors.
  • Slice apples evenly to ensure uniform cooking.
  • Handle the crumble topping gently to keep it light and crumbly.
  • Allow the crumble to cool briefly before serving for best flavor and texture.
  • Choose a rich, creamy plant-based milk like oat or almond milk for superior custard texture.
