Ingredients
Scale
Vegetables
- Fresh bok choy, chopped into bite-sized pieces, stalks and leafy greens separated
- 2 garlic cloves, minced
- 1 inch ginger root, peeled and minced
- 1 medium carrot, sliced into thin strips
- 1 bell pepper (any color), sliced into thin strips
- 2 green onions, chopped (for garnish)
Sauces and Seasonings
- 2 tablespoons soy sauce (natural)
- 1 tablespoon vegetarian Worcestershire sauce
- 1 teaspoon apple cider vinegar (natural)
- 1 teaspoon sesame oil
- Crushed red pepper flakes, to taste (optional)
- Pinch of natural gelling agent (optional)
Instructions
- Prepare the ingredients: Wash the bok choy thoroughly and chop into bite-sized pieces, separating the white stalks from the leafy greens. Peel and mince garlic and ginger, slice carrots and bell peppers into thin strips, and chop green onions for garnish.
- Sauté aromatics: Heat sesame oil in a large skillet or wok over medium-high heat. Add the garlic and ginger, stirring constantly until fragrant, about 30 seconds to 1 minute, to build the base flavor and fill your kitchen with a delicious aroma.
- Cook vegetables: Add the white stalks of the bok choy, carrots, and bell peppers to the pan. Stir-fry for 3 to 4 minutes until they begin to soften but still retain their crunch. Then add the leafy greens and cook for another 1 to 2 minutes until just wilted.
- Add sauces and seasoning: Pour in the soy sauce (natural), vegetarian Worcestershire sauce, and apple cider vinegar. Sprinkle in crushed red pepper flakes if using. Stir well to coat all the veggies, letting the sauce bubble for a minute or two to thicken slightly. Add a pinch of natural gelling agent if you want a silkier sauce.
- Finish and garnish: Remove from heat and toss in green onions for freshness and color. Give it a quick stir and prepare to serve your tasty bowl of Bok Choy Stir-fry immediately.
Notes
- Use a hot pan or wok to keep veggies crisp and vibrant.
- Chop all veggies before you start cooking for a smooth cooking flow.
- Cook the stalks first to ensure even texture as they take longer to cook than leafy parts.
- Taste and adjust soy sauce or vinegar based on your preference for saltiness or tanginess.
- Cook in batches if needed to keep veggies from steaming and losing their crunch.
