Ingredients
Phyllo Cups
- Phyllo dough (10-12 sheets)
- Olive oil (for brushing)
Filling and Toppings
- Plant-Based Brie (about 6 oz, softened to room temperature)
- Fresh blackberries (1 cup)
- Fresh thyme leaves (2 teaspoons)
- Honey (natural) (1 tablespoon, for drizzling)
- Lemon zest (natural) (1 teaspoon)
Optional Garnishes
- Crushed toasted pecans or almonds (2 tablespoons)
- Crushed pistachios (1 tablespoon)
- Fresh mint leaves (for decoration)
- Crushed red pepper flakes (a pinch)
Instructions
- Prepare the Phyllo Dough: Carefully thaw the phyllo dough as per package instructions. Lay out one sheet and lightly brush with olive oil. Layer 3 to 4 sheets, brushing each layer with olive oil to build a sturdy base, then cut into squares sized to fit a mini muffin tin.
- Bake the Phyllo Shells: Gently press each phyllo square into the muffin tin cups. Bake at 350°F (175°C) for 8 to 10 minutes until the shells turn golden and crisp. Watch closely to prevent burning.
- Add the Brie Filling: Once the phyllo cups have cooled slightly, spoon a small piece of softened plant-based Brie into each cup, allowing it to soften just a bit at room temperature.
- Top with Blackberries and Thyme: Arrange fresh blackberries on top of the Brie in each cup. Sprinkle with fresh thyme leaves, then drizzle lightly with honey (natural) and add a hint of lemon zest (natural) for brightness.
- Final Touch and Serve: Optionally, warm the filled cups in the oven at 350°F (175°C) for 2 to 3 minutes to further soften the Brie. Serve immediately while the phyllo cups remain crisp.
Notes
- Handle phyllo dough gently and keep covered with a damp cloth to prevent drying out.
- Use room temperature Brie (plant-based) to ensure it softens nicely without becoming runny.
- Do not overfill the cups to maintain crispiness and flavor balance.
- Fresh thyme provides the best aroma and flavor; dried thyme can be used sparingly if needed.
- Brushing each phyllo layer with olive oil ensures a crisp, non-greasy texture.
