Ingredients

Scale

Protein and Main Ingredients

  • 500g chicken breasts, diced
  • 200g fresh mushrooms, sliced
  • 100g smoked turkey bacon, cut into small pieces

Aromatics and Seasonings

  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Liquids and Sauces

  • 200ml chicken broth
  • 2 tbsp vegetarian Worcestershire sauce (natural)

Thickening Agents

  • 1 tbsp cornstarch
  • 1 tsp natural gelling agent

Topping and Garnish

  • 150g plant-based cheese
  • Fresh herbs (parsley or thyme), chopped, for garnish

Instructions

  1. Prepare Your Ingredients: Dice the chicken breasts into bite-sized pieces and slice the mushrooms. Chop onions and garlic finely to ensure an even flavor base throughout the dish. Cut the smoked turkey bacon into small pieces for easy distribution.
  2. Cook the Bacon and Sauté Aromatics: In a large skillet, cook the smoked turkey bacon until crisp. Remove and set aside. In the same skillet, sauté onions and garlic in the bacon drippings until soft and fragrant to build a rich flavor foundation.
  3. Brown the Chicken and Mushrooms: Add the diced chicken to the skillet and cook until lightly browned on all sides. Then toss in the mushrooms, cooking until they release their juices and soften, blending nicely with the chicken and aromatics.
  4. Create the Creamy Sauce: Pour in chicken broth, add vegetarian Worcestershire sauce (natural), and season with smoked paprika, salt, and pepper. In a small bowl, mix cornstarch with a bit of cold water and stir it into the skillet to thicken the sauce evenly. Add the natural gelling agent. Cook for a few minutes until it reaches a creamy consistency.
  5. Assemble and Bake: Transfer the chicken mixture to a casserole dish. Sprinkle the cooked smoked turkey bacon pieces on top, followed by a generous layer of plant-based cheese. Bake at 180°C (350°F) for 20-25 minutes until bubbly and golden on top.
  6. Garnish and Serve: Finish by scattering fresh herbs like parsley or thyme over the casserole to add a pop of color and freshness that complements the rich flavors inside.

Notes

  • Use fresh mushrooms for better texture and flavor.
  • Do not overcrowd the pan; brown chicken and mushrooms in batches to promote caramelization.
  • Allow casserole to rest for 5-10 minutes after baking to meld flavors and thicken the sauce.
  • Choose plant-based cheese that melts well for a gooey, golden topping.
  • Adjust seasoning at the end by tasting the sauce before baking and tweak salt, pepper, or vegetarian Worcestershire sauce (natural) as needed.
