Instructions

  1. Prepare the Ingredients: Dice the onion and mince the garlic. Chop smoked turkey bacon into bite-sized pieces. Rinse the rice under cool water to remove excess starch for fluffier results.
  2. Cook the Bacon and Saute Aromatics: Heat olive oil or plant-based butter in a large skillet or saucepan over medium heat. Add the turkey bacon and cook until crispy. Remove bacon and set aside. In the same pan, sauté the onions and garlic until fragrant and translucent.
  3. Brown the Chicken: Season the chicken breasts or thighs generously with salt and pepper. Add chicken to the pan and cook each side until golden brown to lock in flavor and texture.
  4. Combine Rice and Broth: Stir the rinsed rice into the pan, coating the grains in the pan juices. Pour in the chicken broth and bring to a gentle boil, then reduce heat to low.
