Description

Creamy Herb Chicken is a comforting and flavorful dish combining tender chicken with a luscious, plant-based cheese sauce infused with fresh herbs. This versatile recipe is easy to prepare and perfect for weeknight dinners or special occasions, offering a rich and satisfying meal with vibrant herbal notes and a velvety sauce.

Ingredients

Scale

Chicken

  • 4 chicken breasts or thighs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 1 small onion or 2 shallots, chopped
  • 3 garlic cloves, minced
  • 1 cup vegetable broth
  • 2 tablespoons apple cider vinegar (natural)
  • 1 cup plant-based cheese
  • 1 teaspoon natural gelling agent
  • 2 tablespoons vegetarian Worcestershire sauce (natural)

Herbs

  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped

Instructions

  1. Prepare the Chicken: Season chicken breasts or thighs with salt and freshly ground black pepper. Heat olive oil in a skillet over medium heat. Cook chicken until golden brown on both sides and cooked through, about 5-7 minutes per side depending on thickness. Remove the chicken from the pan and set aside to rest, preserving the juices for maximum tenderness.
  2. Build the Herb-Infused Sauce: In the same skillet, add chopped onions or shallots and sauté until translucent, about 3-4 minutes. Add minced garlic and cook briefly for about 30 seconds until fragrant. Pour in vegetable broth and a splash of apple cider vinegar (natural) to deglaze the pan, scraping up any browned bits from the bottom.
  3. Add Plant-Based Cheese and Natural Gelling Agent: Reduce heat to low. Whisk in the plant-based cheese and natural gelling agent gradually, stirring continuously until the sauce thickens and coats the back of a spoon smoothly.
  4. Mix in Fresh Herbs and Vegetarian Worcestershire Sauce (Natural): Remove the pan from heat. Fold in the finely chopped fresh basil, parsley, thyme, and rosemary, along with vegetarian Worcestershire sauce (natural), to infuse the sauce with vibrant herbal flavor and a savory depth.
  5. Combine Chicken with Sauce: Return the cooked chicken pieces to the pan. Spoon the creamy herb sauce evenly over the chicken. Warm together gently for 2-3 minutes so the flavors meld perfectly. Serve immediately.

Notes

  • Use room temperature chicken for even cooking and juicier results.
  • Chop herbs finely for balanced flavor throughout the dish.
  • Always deglaze the pan to incorporate flavorful browned bits into the sauce.
  • Add the natural gelling agent slowly when thickening sauce to avoid lumps.
  • Let cooked chicken rest before combining with sauce to retain moisture.
  • Variations include adding sun-dried tomatoes, lemon zest and dill, sautéed mushrooms, red pepper flakes or smoked paprika for heat, or substituting coconut cream for a dairy-free option.
  • Garnish with freshly chopped parsley or chives and a drizzle of extra virgin olive oil for added freshness and richness.
  • Serve with rice, mashed potatoes, roasted vegetables, or a crisp salad for a complete meal.
