Ingredients

Scale

Meat and Dairy Substitutes

  • 6 slices smoked turkey bacon, chopped
  • 1 cup plant-based cheese, shredded
  • 1 cup plant-based cream or coconut milk

Vegetables

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, finely chopped (any color)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • Fresh cilantro, chopped (for garnish)

Liquids and Sauces

  • 4 cups vegetable broth
  • 1/2 cup grape juice (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)

Seasonings and Others

  • 2 tablespoons taco seasoning blend (includes chili powder, cumin, paprika, oregano)
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Base: Start by finely chopping the onion, garlic, and bell peppers. In a large pot over medium heat, cook the smoked turkey bacon until crispy. Remove the bacon and set it aside. In the remaining fat, sauté the onion and garlic until fragrant and translucent. Add the bell peppers and cook for a few additional minutes until slightly softened.
  2. Layer the Flavors: Add the diced tomatoes, kidney beans, corn, and vegetarian Worcestershire sauce to the pot. Stir in the taco seasoning blend. Pour in the vegetable broth and grape juice, and bring the mixture to a gentle simmer. Allow it to simmer for about 10-15 minutes so the flavors meld together.
  3. Add Creaminess: Stir in the plant-based cream and plant-based cheese until melted and incorporated. Add the natural gelling agent to thicken the soup naturally. Mix well and continue to cook over low heat until the soup is creamy and luscious.
  4. Finish and Serve: Chop the cooked turkey bacon you set aside and fold it back into the soup just before serving. Garnish with fresh cilantro. Ladle into bowls and serve warm.

Notes

  • Use freshly ground chili powder and cumin for enhanced flavor.
  • Simmer the soup gently to avoid overcooking vegetables and to develop depth of flavor.
  • Prepare vegetables and seasonings ahead of time to speed up cooking.
  • Adjust the amount of plant-based cream to achieve your preferred soup thickness.
  • Lightly toast spices in the pot before adding liquids to increase their aroma.
