Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (one packet)
  • 1 tsp natural gelling agent
  • 1 tsp salt
  • 1 cup plant-based milk, warmed to about 110°F
  • 2 tbsp granulated sugar
  • 4 tbsp plant-based butter (natural), melted

Garlic Butter Mixture

  • 4 cloves garlic, freshly minced
  • 3 tbsp plant-based butter (natural), melted
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Activate the yeast: Warm the plant-based milk to about 110°F, warm to the touch but not hot. Stir in the granulated sugar, then sprinkle the active dry yeast on top. Let it sit for 5-10 minutes until frothy and bubbly, indicating the yeast is active.
  2. Prepare the garlic butter mixture: Gently melt the plant-based butter and mix in the minced garlic and chopped parsley. Set aside this flavorful blend to enrich the dough and brush on top of the rolls before baking.
  3. Make the dough: In a large bowl, combine the all-purpose flour, salt, and natural gelling agent. Pour the activated yeast mixture and garlic butter into the dry ingredients and stir until a sticky dough forms. Turn out the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. First rise: Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm spot for 1 to 1.5 hours until doubled in size.
  5. Shape the rolls: Punch down the risen dough to release the air. Divide into evenly sized portions and roll each into a smooth ball. Arrange the balls side by side in a greased baking dish or lined tray to allow them to bake connected and soft.
  6. Second rise and bake: Brush the tops of the shaped rolls generously with the garlic butter mixture. Cover and let them rise again for about 30 minutes. Meanwhile, preheat the oven to 375°F. Bake the rolls for 18-22 minutes until golden brown and fragrant.
  7. Finish and serve: Remove the rolls from the oven and immediately brush with more garlic butter to lock in flavor and add shine. Let them cool slightly before serving warm.

Notes

  • Use room temperature ingredients to ensure even yeast activation and perfect dough development.
  • Allow enough time for dough to double during rises for soft, airy rolls.
  • Cover dough during rising to prevent a dry skin from forming, using a damp towel or plastic wrap.
  • Brush rolls generously and multiple times with garlic butter for enhanced flavor and glossy appearance.
  • Check oven temperature with an accurate thermometer to avoid underbaking.
