Instructions

  1. Prepare Your Ingredients: Wash and slice all fresh vegetables: thinly slice the red onion, pit and slice the olives, and tear the basil leaves. Grate or crumble the plant-based cheese to prepare for assembly.
  2. Heat Your Pan: Place a non-stick skillet or pan over medium heat. Drizzle in a little olive oil and heat until shimmering but not smoking to ensure a crispy tortilla.
  3. Assemble the Quesadilla: Place one tortilla flat in the pan. Spread an even layer of plant-based cheese on half of the tortilla. Layer spinach, sun-dried tomatoes, kalamata olives, and red onion evenly on top. Sprinkle garlic powder and add a few drops of vegetarian Worcestershire sauce (natural) over the veggies for extra flavor.
  4. Cook and Fold: Fold the tortilla over to cover the fillings and press gently with a spatula. Cook for 3 to 4 minutes until the bottom side is golden and crispy. Carefully flip and cook the other side until the cheese melts and the quesadilla is warmed through.
