Scale
Main Ingredients
- 4 flour tortillas (soft and pliable)
- 1 cup plant-based cheese (shredded or crumbled)
- 1/4 cup kalamata olives, pitted and sliced
- 1 cup fresh spinach leaves
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn
- 1/2 teaspoon garlic powder (natural)
- 1 teaspoon vegetarian Worcestershire sauce (natural)
- 2 tablespoons olive oil
Instructions
- Prepare Your Ingredients: Wash and slice all fresh vegetables: thinly slice the red onion, pit and slice the olives, and tear the basil leaves. Grate or crumble the plant-based cheese to prepare for assembly.
- Heat Your Pan: Place a non-stick skillet or pan over medium heat. Drizzle in a little olive oil and heat until shimmering but not smoking to ensure a crispy tortilla.
- Assemble the Quesadilla: Place one tortilla flat in the pan. Spread an even layer of plant-based cheese on half of the tortilla. Layer spinach, sun-dried tomatoes, kalamata olives, and red onion evenly on top. Sprinkle garlic powder and add a few drops of vegetarian Worcestershire sauce (natural) over the veggies for extra flavor.
- Cook and Fold: Fold the tortilla over to cover the fillings and press gently with a spatula. Cook for 3 to 4 minutes until the bottom side is golden and crispy. Carefully flip and cook the other side until the cheese melts and the quesadilla is warmed through.
- Serve and Enjoy: Remove the quesadilla from the pan and let rest for one minute. Slice into wedges and sprinkle fresh basil leaves on top before serving for a fragrant finishing touch.
Notes
- Spread ingredients evenly to avoid uneven cooking or breakage.
- Cook over medium to low heat for crispy tortillas without burning.
- Use fresh grated or crumbled plant-based cheese for best melting results.
- Press the quesadilla lightly when folding and cooking to bond fillings without crushing them.
- Allow quesadillas to rest briefly before cutting to prevent fillings from spilling out.
