Instructions

  1. Prepare Your Ingredients: Wash, peel, and dice potatoes into uniform cubes. Chop smoked turkey bacon into bite-sized pieces. Finely dice onions, celery, and garlic.
  2. Cook Smoked Turkey Bacon: Heat a large pot over medium heat and add the smoked turkey bacon pieces. Cook until crispy and golden. Transfer to a paper towel-lined plate to drain excess fat, leaving flavorful drippings in the pot.
  3. Sauté the Vegetables: In the same pot, add plant-based butter and sauté onions, celery, and garlic until softened and fragrant, about 5 minutes.
  4. Add Potatoes, Broth, and Seasonings: Stir in diced potatoes, vegetable broth, and vegetarian Worcestershire sauce (natural). Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Blend and Add Cream: Remove a portion of the soup and use an immersion blender to puree part of it, keeping some chunks for texture. Stir in plant-based cream and natural gelling agent. Adjust salt and pepper to taste.
  6. Finish with Smoked Turkey Bacon and Herbs: Return crispy smoked turkey bacon to the pot. Sprinkle freshly chopped herbs on top and let warm through for a few minutes before serving.
