Ingredients
Scale
Soup Base
- 4 cups diced Russet potatoes
- 4 slices smoked turkey bacon, chopped
- 1 medium onion, finely diced
- 2 celery stalks, finely diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon plant-based butter
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- 1/2 cup plant-based cream
- 1 teaspoon natural gelling agent
Garnishes & Fresh Herbs
- Fresh parsley or chives, chopped
Instructions
- Prepare Your Ingredients: Wash, peel, and dice potatoes into uniform cubes. Chop smoked turkey bacon into bite-sized pieces. Finely dice onions, celery, and garlic.
- Cook Smoked Turkey Bacon: Heat a large pot over medium heat and add the smoked turkey bacon pieces. Cook until crispy and golden. Transfer to a paper towel-lined plate to drain excess fat, leaving flavorful drippings in the pot.
- Sauté the Vegetables: In the same pot, add plant-based butter and sauté onions, celery, and garlic until softened and fragrant, about 5 minutes.
- Add Potatoes, Broth, and Seasonings: Stir in diced potatoes, vegetable broth, and vegetarian Worcestershire sauce (natural). Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Blend and Add Cream: Remove a portion of the soup and use an immersion blender to puree part of it, keeping some chunks for texture. Stir in plant-based cream and natural gelling agent. Adjust salt and pepper to taste.
- Finish with Smoked Turkey Bacon and Herbs: Return crispy smoked turkey bacon to the pot. Sprinkle freshly chopped herbs on top and let warm through for a few minutes before serving.
Notes
- Choose Russet or Yukon Gold potatoes for the best creamy texture without over-mushing.
- Do not over-blend; keep some potato chunks for texture contrast.
- Sauté vegetables slowly to build a rich, deep flavor base.
- Add plant-based cream gradually to reach your preferred soup thickness.
- Garnish generously with fresh herbs and crispy turkey bacon pieces for color and texture.
