Description

Pepper Steak Stir Fry is a quick, flavorful, and nourishing meal combining tender beef strips with crisp bell peppers, onions, and a savory-sweet-tangy sauce. Ready in under 30 minutes, it offers a vibrant, protein-packed dinner with minimal cleanup, perfect for busy nights.

Ingredients

Scale

Main Ingredients

  • 300g thinly sliced beef strips
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup yellow bell pepper, sliced
  • 1/2 cup green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon freshly grated ginger

Sauce

  • 3 tablespoons soy sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetarian Worcestershire sauce
  • 1 teaspoon natural gelling agent mixed with 2 tablespoons water

Finishing

  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame oil (natural, for drizzling)
  • 1 tablespoon neutral oil (for cooking)

Instructions

  1. Prep Your Ingredients: Thinly slice the beef across the grain for tenderness. Wash and slice bell peppers into strips, slice the onion, and mince garlic and ginger to have everything ready for quick cooking.
  2. Cook the Beef: Heat neutral oil in a large skillet or wok over medium-high heat. Add beef strips and cook for 2-3 minutes until browned but not fully cooked. Remove from pan and set aside to keep tender.
  3. Sauté Vegetables and Aromatics: In the same pan, add sliced onions, garlic, and ginger. Stir-fry for 1 minute until fragrant. Add bell peppers and cook just until crisp-tender to maintain color and crunch.
  4. Prepare the Sauce: Whisk together soy sauce (natural), apple cider vinegar, brown sugar, and vegetarian Worcestershire sauce in a small bowl. Pour sauce into the pan with vegetables, stirring constantly. Add the natural gelling agent slurry and stir to thicken the sauce evenly.
  5. Combine and Finish: Return beef to skillet, toss to coat all ingredients evenly with sauce over medium heat. Remove from heat, drizzle sesame oil (natural) for fragrance, and garnish with sliced green onions before serving.

Notes

  • Always thinly slice the beef to ensure quick cooking and tenderness.
  • Use a hot skillet or wok to get a good sear without steaming the ingredients.
  • Do not overcook the vegetables; keep them crisp and colorful.
  • Have all ingredients prepped before cooking, as stir fry cooks quickly.
  • Add sauce gradually to control consistency and flavor balance.
