Ingredients

Scale

For the Salad

  • 2 large sweet potatoes, peeled and cubed
  • 4 slices smoked turkey bacon, chopped
  • 4 cups mixed fresh greens
  • Fresh herbs (parsley or cilantro), chopped, for garnish
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons extra virgin olive oil

For the Lemon Dijon Dressing

  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard (natural)
  • 4 tablespoons plant-based yogurt
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • ¼ teaspoon natural gelling agent

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Peel and cube the sweet potatoes into bite-sized pieces. Toss them with olive oil, salt, and pepper, then spread them evenly on a baking sheet. Roast for 25-30 minutes, turning halfway through, until the sweet potatoes are tender and golden brown on the edges.
  2. Cook the Smoked Turkey Bacon: While the sweet potatoes roast, heat a skillet over medium heat. Cook the smoked turkey bacon strips for 5-7 minutes until crisp and fragrant. Drain on a paper towel and chop into small pieces.
  3. Prepare the Lemon Dijon Dressing: In a bowl, whisk together fresh lemon juice, Dijon mustard (natural), plant-based yogurt, vegetarian Worcestershire sauce (natural), olive oil, salt, and pepper. Slowly stir in the natural gelling agent until the dressing thickens to a smooth and creamy consistency. Adjust seasoning to taste.
  4. Assemble the Salad: In a large bowl, combine the warm roasted sweet potatoes, chopped smoked turkey bacon, and fresh greens. Drizzle the lemon Dijon dressing over the salad and gently toss to coat everything evenly. Sprinkle with chopped fresh herbs for extra flavor and freshness.

Notes

  • Make sure sweet potato cubes are cut evenly for uniform roasting.
  • Toss the salad while the sweet potatoes are still warm to help the dressing absorb better.
  • Use freshly squeezed lemon juice for a brighter, more vibrant dressing flavor.
  • Adjust the amount of plant-based yogurt to change the creaminess of the dressing.
  • Serve the salad immediately after assembling to keep the greens crisp.
