			Seitan Dough
- 1 1/2 cups vital wheat gluten
- 1 teaspoon salt
- 1/2 teaspoon natural gelling agent
- 1 1/4 cups vegetable broth (natural)
- 2 tablespoons olive oil
- 1 tablespoon vegetarian Worcestershire sauce (natural)
Stuffing
- 2 tablespoons olive oil
- 2 large yellow onions, chopped
- 3 garlic cloves, minced
- 4 ounces smoked turkey bacon, chopped
- 2 tablespoons fresh sage leaves, chopped
- 1 cup plant-based bread crumbs
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the Stuffing: Heat olive oil in a skillet over medium heat. Add chopped yellow onions and cook slowly for 15 to 20 minutes until golden and caramelized. Stir in minced garlic and chopped smoked turkey bacon, cooking until the bacon is crisped. Remove from heat and mix in fresh sage leaves, plant-based bread crumbs, vegetarian Worcestershire sauce (natural), salt, and pepper. Stir well and set aside to cool.
- Make the Seitan Dough: In a large bowl, whisk together vital wheat gluten, salt, and natural gelling agent. In a separate container, combine vegetable broth (natural), olive oil, and vegetarian Worcestershire sauce (natural). Pour the wet ingredients into the gluten mixture and stir until a dough forms. Knead the dough for about 5 minutes until it becomes springy and elastic.
- Roll Out and Stuff: On a lightly floured surface, roll the seitan dough into a rectangle approximately 12 by 9 inches. Spread the cooled stuffing mixture evenly over the dough, leaving a small border around the edges. Roll the dough tightly into a log shape, sealing the edges firmly to completely enclose the filling.
- Secure and Wrap: Wrap the roulade tightly in parchment paper or cheesecloth, twisting both ends to secure it firmly. Tie with kitchen twine if necessary to maintain the shape during cooking.
- Steam the Roulade: Place the wrapped roulade in a steamer basket over boiling water. Cover and steam for 60 to 75 minutes, turning occasionally to ensure even cooking. The roulade should firm up and hold its shape well.
- Finish and Slice: Let the roulade cool slightly before unwrapping. For a crispier exterior, pan-sear slices in olive oil before serving. Slice into thick rounds and serve beautifully with your choice of sides.
Notes
- Knead thoroughly to develop gluten for a firm, chewy texture.
- Caramelize onions slowly for maximum sweetness and depth in the stuffing.
- Roll and seal dough tightly to prevent stuffing leakage during steaming.
- Use fresh sage for vibrant flavor; dried sage can be substituted in smaller amounts.
- Maintain a gentle boil while steaming to avoid sogginess.
