Description

Sticky Beef Noodles combine tender beef slices with chewy rice noodles coated in a rich, sticky, naturally flavored sauce. Ready in under 30 minutes, this comforting dish features a harmonious blend of soy sauce, garlic, ginger, and savory spices, perfect for quick weeknight dinners or relaxed weekend meals with family and friends.

Ingredients

Scale

Beef and Marinade

  • 300g lean beef strips
  • 2 tbsp soy sauce (natural)
  • 1 tsp brown sugar (natural)
  • 2 garlic cloves, minced
  • 1 tbsp apple cider vinegar

Noodles

  • 200g rice noodles

Sauce

  • 3 tbsp soy sauce (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tsp brown sugar (natural)
  • 1/4 tsp natural gelling agent
  • 1 tbsp sesame oil

Aromatics and Garnish

  • 1 tsp ground or fresh ginger
  • 2 green onions, chopped

Optional Vegetables

  • Bell peppers, snap peas, broccoli florets, carrots, or bok choy (as desired)

Instructions

  1. Prepare the Beef: Slice beef thinly against the grain for tenderness. Marinate with soy sauce (natural), brown sugar (natural), minced garlic, and apple cider vinegar for 10 minutes to enhance flavor.
  2. Cook the Noodles: Cook rice noodles according to package instructions until just tender. Drain and rinse with cool water to stop cooking and prevent sticking. Set aside.
  3. Make the Sticky Sauce: In a bowl, whisk together soy sauce (natural), vegetarian Worcestershire sauce (natural), brown sugar (natural), natural gelling agent, and sesame oil until glossy and combined.
  4. Stir-Fry the Beef: Heat a pan over medium-high heat and add sesame oil. Quickly stir-fry the marinated beef until edges caramelize but meat remains tender, about 2-3 minutes.
  5. Combine and Coat: Add cooked noodles and sauce to the pan with beef. Toss continuously over heat to evenly coat noodles and allow sauce to thicken and cling to all ingredients.
  6. Garnish and Serve: Remove from heat and sprinkle chopped green onions on top. Serve immediately for best flavor and texture.

Notes

  • Always slice beef thinly across the grain for the best tenderness.
  • Keep your pan hot to quickly sear beef and lock in juices.
  • Slightly undercook noodles as they will continue cooking when combined with the sauce.
  • Adjust brown sugar (natural) to balance stickiness and sweetness in the sauce.
  • Use fresh garlic and ginger to maximize flavor depth.
