Add the chopped mushroom stems and diced smoked turkey bacon, cooking until the bacon is crisp and the mixture is slightly caramelized. Stir in the breadcrumbs, chopped parsley, vegetarian Worcestershire sauce (natural), apple cider vinegar, black pepper, salt, and natural gelling agent. Mix well until combined and slightly sticky.
