This nourishing soup balances aromatic flavors and textures perfectly, offering a light yet satisfying meal ideal for any time of day.

Ingredients

Scale

Soup Base

  • 2 teaspoons oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 stalk fresh lemongrass, chopped
  • 6 cups vegetable broth

Vegetables & Seasonings

  • 1 cup carrots, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • Pinch of chili flakes (optional)

Potstickers & Herbs

  • 1215 plant-based potstickers (ready-made or homemade)
  • 1/4 cup fresh Thai basil leaves
  • 1/4 cup fresh cilantro leaves, chopped
  • 2 tablespoons fresh lime juice

Optional Ingredients

  • Natural gelling agent (optional)
  • Additional chili flakes or sliced bird’s eye chilies for heat (optional)

Instructions

  1. Prepare the Broth: Heat oil in a pot over medium heat. Gently sauté minced garlic, ginger, and chopped lemongrass until fragrant, about 2-3 minutes. Pour in the vegetable broth and bring it to a simmer, allowing the aromatics to infuse the soup thoroughly.
  2. Add Vegetables and Seasonings: Add sliced carrots and mushrooms to the simmering broth. Stir in the vegetarian Worcestershire sauce (natural), apple cider vinegar, and a pinch of chili flakes if desired. Cook until the vegetables are tender but still retain their vibrant texture, approximately 5-7 minutes.
  3. Cook the Potstickers: Gently add the plant-based potstickers into the broth. Cook according to package instructions or until they are tender and heated through, typically about 5-6 minutes.
  4. Finish with Fresh Herbs and Lime: Remove the soup from heat. Stir in fresh Thai basil, cilantro, and fresh lime juice to add brightness and a fresh zest to the soup. Add natural gelling agent if using and stir well to create a pleasing texture.

Notes

  • Always use fresh herbs and aromatics to maximize flavor.
  • Add potstickers towards the end of cooking to prevent them from overcooking or breaking apart.
  • Taste the soup throughout cooking to balance acidity, saltiness, and spice gradually.
  • Using homemade vegetable broth can enhance the depth and richness of the soup.
  • Add fresh herbs just before serving to ensure vibrant flavor and appealing presentation.
