Instructions

  1. Prepare the Ube Puree: Steam or boil fresh ube until tender, then mash smoothly or blend until moist and soft enough to blend easily into the dough.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, instant yeast, natural sugar, salt, and natural gelling agent until evenly combined to help the yeast activate consistently.
  3. Combine Wet Ingredients: In a separate bowl, stir together the ube puree, lukewarm plant-based milk, vegetable oil, and vegetarian Worcestershire sauce until smooth.
  4. Form the Dough: Gradually add the wet ingredients to the dry mix. Use your hands or a dough hook on low speed to combine thoroughly. Knead for 8 to 10 minutes until the dough becomes elastic, smooth, and slightly sticky yet manageable.
  5. First Rise: Cover the dough with a clean cloth and place in a warm spot. Allow it to rise for 1 to 1.5 hours or until it doubles in size to ensure lightness and fluffiness.
  6. Shape the Rolls: Gently punch down the dough to release air, then divide into equal portions. Shape each into a smooth ball and place on a greased baking tray, spaced apart.
