A quick and flavorful Yaki Udon Noodle dish combining thick, chewy udon noodles with fresh vegetables and smoky plant-based bacon. Ready in under 30 minutes, this recipe offers a nutritious and fuss-free meal perfect for busy days with a rich, savory taste and vibrant textures.

Ingredients

Scale

Main Ingredients

  • 200g udon noodles
  • 100g plant-based smoked bacon, sliced into bite-sized pieces
  • 1 bell pepper, thinly sliced
  • 1 medium carrot, julienned or thinly sliced
  • 3 green onions, sliced
  • 2 cloves garlic, minced

Sauce and Flavorings

  • 3 tbsp soy sauce (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds (optional)

Instructions

  1. Prepare the Ingredients: Slice the plant-based smoked bacon into bite-sized pieces. Chop the bell peppers, carrots, and green onions into thin strips or rounds for quick cooking and texture harmony.
  2. Cook the Udon Noodles: Boil the udon noodles according to the package instructions, usually 3 to 4 minutes until just tender. Drain and rinse with cold water to stop cooking and keep noodles chewy.
  3. Sauté the Bacon and Veggies: Heat sesame oil in a large pan over medium-high heat. Add the plant-based smoked bacon pieces and cook until they start to crisp. Add minced garlic and stir for 30 seconds to release aroma. Toss in bell peppers and carrots, cook until tender but vibrant and slightly crunchy.
  4. Combine Noodles and Sauce: Lower the heat slightly. Add the noodles to the pan and pour in soy sauce (natural), vegetarian Worcestershire sauce (natural), and apple cider vinegar. Toss gently but thoroughly to coat noodles and veggies evenly with the sauce.
  5. Finish and Garnish: Turn off the heat. Sprinkle sliced green onions and sesame seeds on top. Toss lightly one last time and serve your Yaki Udon Noodle dish.

Notes

  • Do not overcook the udon noodles to preserve chewy texture.
  • Use fresh, crisp vegetables to contrast the smoky bacon flavor.
  • Adjust soy sauce and vegetarian Worcestershire sauce quantities to control saltiness.
  • Cook on medium-high heat for caramelized flavors without burning ingredients.
  • Add sesame oil towards the end to retain its rich aroma.
