Description

Baked Feta Pasta is a creamy, flavorful, and comforting dish featuring roasted cherry tomatoes, plant-based feta, garlic, and fresh basil. This easy-to-make recipe combines simple pantry staples into a luscious sauce that coats your favorite pasta, delivering vibrant textures and rich taste perfect for any weeknight or cozy meal.

Ingredients

Scale

Main Ingredients

  • 200g feta (plant-based cheese)
  • 300g cherry tomatoes
  • 4 garlic cloves (whole)
  • 3 tbsp olive oil (natural)
  • 250g pasta of choice (gluten-free option if preferred)
  • Handful fresh basil leaves, chopped
  • 1/2 tsp red pepper flakes (natural), optional
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Tomatoes and Feta: Preheat your oven to 400°F (200°C). Place a block of plant-based feta in the center of a baking dish surrounded by cherry tomatoes and whole garlic cloves. Drizzle generously with olive oil (natural) and season with salt, pepper, and red pepper flakes if using.
  2. Bake Until Perfectly Roasted: Bake for about 30 minutes or until the tomatoes burst, garlic softens, and feta becomes slightly golden and creamy. This slow roasting creates a rich and tangy sauce base.
  3. Cook the Pasta: While the feta and tomatoes bake, cook your chosen pasta according to package instructions until al dente. Drain, reserving one cup of pasta water to adjust the sauce if needed.
  4. Combine and Toss: Remove the baked feta and tomatoes from the oven. Mash them gently together in the baking dish using a fork or spoon to create a creamy sauce. Add the cooked pasta directly to the dish and toss to coat evenly. Use the reserved pasta water to loosen the sauce if it appears too thick.
  5. Finish with Fresh Basil: Sprinkle chopped fresh basil over the pasta and toss lightly before serving to add a bright and herbaceous note.

Notes

  • Choose ripe cherry tomatoes for juicier, more flavorful sauce.
  • Reserve pasta water to help bind the sauce and pasta for a silky texture.
  • Use a sturdy baking dish to avoid spills during roasting.
  • Bake garlic whole so it mellows and sweetens in the sauce.
  • Let the pasta rest briefly before serving to allow flavors to meld.
