Ingredients

Scale

Main Ingredients

  • 500g fresh broccoli florets
  • 200g plant-based cheese, grated
  • 150g smoked turkey bacon, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour (or gluten-free flour for GF version)
  • 2 cups plant-based milk
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp natural gelling agent
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Optional Toppings

  • 1/2 cup breadcrumbs (gluten-free if needed)
  • Chopped parsley or chives for garnish
  • Toasted almond slices for garnish

Instructions

  1. Prepare the Broccoli: Chop the fresh broccoli into bite-sized florets. Lightly steam or blanch them until they are tender but still retain a slight crunch to keep their vibrant color and fresh taste.
  2. Cook the Smoked Turkey Bacon: Chop the smoked turkey bacon into small pieces and cook in a skillet over medium heat until crispy. Drain excess fat and set the crispy bits aside.
  3. Make the Cheese Sauce: In the same skillet, sauté the finely chopped onions and garlic until translucent. Sprinkle in the all-purpose flour and stir constantly to create a roux. Gradually whisk in the plant-based milk while stirring until the mixture thickens. Add the grated plant-based cheese and stir until melted and smooth. Mix in the vegetarian Worcestershire sauce (natural), seasonings, smoked paprika, and the natural gelling agent until the sauce reaches a creamy consistency.
  4. Combine Ingredients: Gently fold the steamed broccoli and crispy smoked turkey bacon into the cheese sauce, ensuring everything is evenly coated to lock in the flavors.
  5. Bake to Perfection: Transfer the mixture to a greased casserole dish. Sprinkle breadcrumbs evenly on top if using. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes or until the casserole is bubbling and golden on top.

Notes

  • Use fresh ingredients for the best flavor, especially fresh broccoli and quality plant-based cheese.
  • Do not overcook broccoli; retaining a slight crunch preserves the texture and nutrients.
  • Stir the sauce patiently during preparation to avoid lumps and ensure smooth creaminess.
  • Customize the crunchy topping by trying crushed nuts or toasted seeds instead of breadcrumbs.
  • Allow the casserole to rest for a few minutes after baking to set, making it easier to slice and serve.
