Description

Cheesy Baked Tortellini Casserole combines tender cheese-filled tortellini with creamy melted plant-based cheese, smoky turkey slices, fresh spinach, and a flavorful marinara sauce (natural). This comforting baked pasta dish is quick to prepare, customizable with a variety of vegetables and spices, and perfect for a delicious, hearty meal any day of the week.

Ingredients

Base Ingredients

  • Fresh or frozen cheese-filled tortellini pasta – 12 oz
  • Plant-based cheese blend – 2 cups
  • Smoked turkey slices – 8 oz
  • Marinara sauce (natural) – 2 cups
  • Fresh spinach – 3 cups, loosely packed

For Sautéing

  • Minced garlic – 3 cloves
  • Minced onion – 1 medium onion
  • Olive oil – 2 tablespoons

Herbs and Seasonings

  • Fresh basil (natural) – 1/4 cup chopped
  • Fresh oregano (natural) – 1 tablespoon chopped
  • Natural gelling agent – 1 teaspoon
  • Salt – 1 teaspoon
  • Black pepper – 1/2 teaspoon

Instructions

  1. Prepare the pasta and sauce: Bring a large pot of salted water to a boil and cook the tortellini according to package directions until al dente. Drain and set aside. Heat olive oil in a deep skillet over medium heat. Sauté minced garlic and onion until translucent and fragrant. Add marinara sauce (natural), fresh basil, oregano, salt, and pepper. Stir in the natural gelling agent and simmer gently until the sauce thickens slightly.
  2. Layer the casserole: In a greased baking dish, spread a thin layer of the marinara sauce. Add half of the cooked tortellini evenly, then layer half of the fresh spinach and smoked turkey slices. Sprinkle a generous amount of plant-based cheese blend on top. Repeat the layers with remaining tortellini, spinach, turkey, and cheese to finish with a cheesy layer that will brown beautifully in the oven.
  3. Bake to perfection: Preheat your oven to 375°F (190°C). Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and bake an additional 10 minutes or until the cheese is bubbling and slightly golden on top. Let the casserole cool for a few minutes before serving so all the flavors settle together wonderfully.

Notes

  • Use fresh tortellini: It bakes better and has a softer texture than dried versions.
  • Do not overmix cheese layers: Keep it light to avoid a heavy, greasy finish.
  • Rest before serving: Letting the casserole sit improves flavor melding and easier slicing.
  • Add herbs last minute: Fresh basil and oregano sprinkled right before serving brighten the dish beautifully.
  • Customize sauce thickness: Adjust natural gelling agent amounts to achieve your preferred creamy consistency.
