Ingredients
Scale
Potatoes and Base
- 4 large russet potatoes, peeled and thinly sliced
Cheese Sauce
- 2 cups plant-based milk
- 1 1/2 cups plant-based cheese, shredded or sliced
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1 tbsp apple cider vinegar (natural)
- 1 tsp natural gelling agent
- Salt and pepper, to taste
Additional Ingredients
- 6 slices smoked turkey bacon, chopped
- 1 medium onion, finely sliced
- 1 tbsp fresh thyme or parsley, chopped
Instructions
- Prepare the Potatoes: Peel and slice russet potatoes into thin, even rounds to ensure uniform cooking and maximum flavor absorption.
- Cook the Smoked Turkey Bacon and Onions: In a skillet, lightly brown the smoked turkey bacon until crisp. Remove and set aside. Using the remaining fat, sauté the onions until they are translucent and fragrant.
- Make the Creamy Cheese Sauce: Combine plant-based milk, plant-based cheese, vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), and natural gelling agent in a saucepan. Stir continuously over medium heat until the sauce thickens and becomes smooth and luscious.
- Layer the Bake: Grease a baking dish. Layer half of the potato slices, then half of the smoked turkey bacon and sautéed onions. Pour half of the cheese sauce evenly over the layers. Repeat with remaining potatoes, bacon, onions, and finish with a generous pour of the remaining cheese sauce on top.
- Bake Until Golden and Bubbling: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 40 minutes. Remove the foil for the last 10 minutes to develop a golden, bubbling crust. Let rest briefly before serving to allow flavors to settle.
Notes
- Use a mandoline or a very sharp knife to slice potatoes evenly for uniform cooking.
- Do not overcrowd layers; allow heat circulation to ensure potatoes cook properly.
- Warm plant-based milk before combining with cheese to help the sauce melt smoothly and quickly.
- Season each layer generously with salt and pepper to enhance the mild flavors of the potatoes.
- Allow the dish to rest after baking for better structure and easier slicing.
