Description

These Cheesy Potatoes combine creamy plant-based cheese with smoky turkey bacon, creating a comforting and savory dish perfect for family dinners or potlucks. The tender russet potatoes soaked in a luscious cheese sauce with natural seasonings bring warmth and satisfaction in every bite.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes, peeled and cut into even-sized cubes

Sauce

  • 1 cup plant-based milk
  • 1 cup plant-based cheese (sharp or mild, shredded)
  • 1 tsp natural gelling agent
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1/2 tsp onion powder (natural)
  • 1/2 tsp garlic powder (natural)
  • 1 tsp apple cider vinegar (natural)
  • Salt and pepper to taste

Toppings

  • 6 slices smoked turkey bacon, cooked and roughly chopped

Instructions

  1. Prepare the Potatoes: Peel and cut the russet potatoes into even cubes to ensure uniform cooking. Boil the potatoes in salted water for 10 to 15 minutes until they are just tender but not mushy. Drain well and set aside.
  2. Cook the Smoked Turkey Bacon: While potatoes boil, crisp the smoked turkey bacon in a skillet over medium heat. Once crispy, transfer to paper towels to drain excess fat and chop roughly.
  3. Make the Cheese Sauce: In a medium saucepan, gently warm the plant-based milk and plant-based cheese together. Sprinkle in the natural gelling agent gradually while stirring to create a silky, thickened sauce. Add vegetarian Worcestershire sauce, onion powder, garlic powder, salt, pepper, and apple cider vinegar. Keep on low heat, stirring occasionally to prevent clumping.
  4. Combine and Bake: Preheat the oven to 375°F (190°C). In a large bowl, mix the boiled potatoes, chopped turkey bacon, and creamy cheese sauce until well combined. Transfer the mixture to a greased baking dish and spread evenly. Bake uncovered for about 20 minutes until the dish is bubbling hot and golden on top.
  5. Serve and Enjoy: Remove from oven and let the Cheesy Potatoes rest for a few minutes to allow the sauce to thicken slightly. Serve warm and enjoy with family or friends.

Notes

  • Choose russet potatoes for the best creamy and tender texture.
  • Boil potatoes until just tender to maintain shape during baking.
  • Use sharp plant-based cheese for richer flavor and smooth melting.
  • Adjust natural gelling agent amount to achieve perfect sauce thickness.
  • Season potatoes, bacon, and sauce individually for deeper flavor layers.
  • Allow the dish to rest before serving to set for easy slicing.
