Ingredients
Scale
Potatoes
- 4 large Russet or Yukon Gold potatoes, peeled and thinly sliced
Sauce and Flavorings
- 2 cups plant-based milk
- 2 tablespoons vegetarian Worcestershire sauce (natural)
- 1 tablespoon apple cider vinegar
- 1 teaspoon natural gelling agent
- 1 teaspoon fresh thyme leaves
- Salt, to taste
- Black pepper, to taste
Aromatics and Protein
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 1/2 cups tender smoked turkey, chopped
Cheese Topping
- 1 1/2 cups plant-based cheese, shredded
Instructions
- Prepare the Potatoes: Peel and slice the potatoes into thin, even rounds. Set aside while preparing other ingredients.
- Sauté Aromatics and Smoked Turkey: In a large skillet, gently sauté diced onion and minced garlic until translucent and fragrant. Add chopped smoked turkey and cook briefly until warmed through and flavors mingle.
- Make the Creamy Sauce: In a saucepan, combine plant-based milk, vegetarian Worcestershire sauce (natural), apple cider vinegar, a pinch of salt and black pepper, fresh thyme, and natural gelling agent. Warm gently while stirring continuously until the sauce thickens to a smooth consistency perfect for coating the potatoes.
- Assemble the Dish: Grease a baking dish. Layer half of the sliced potatoes evenly on the bottom. Spread the smoked turkey and sautéed aromatics evenly over the potatoes. Pour half of the creamy sauce on top. Repeat with the remaining potatoes and sauce. Sprinkle the shredded plant-based cheese generously over the top layer.
- Bake: Preheat the oven to 350°F (175°C). Bake the assembled dish uncovered for 45 to 55 minutes, or until the potatoes are tender and the top is golden brown and bubbly. Remove from the oven and let rest briefly before serving to allow layers to set.
Notes
- Use a mandoline or sharp knife for uniform potato slices to ensure even cooking.
- Allow the sauce to thicken properly before assembling; too thin and it will be watery, too thick and it won’t spread well.
- Rest the casserole after baking so the flavors meld and layers settle.
- Fresh thyme or alternative herbs like rosemary or sage enhance flavor and aroma.
- Adjust seasoning by tasting the sauce before assembly to balance acidity and salt.
