Description

These Cinnamon Buns feature a soft, fluffy dough with a gooey cinnamon and brown sugar swirl, baked to golden perfection and topped with a smooth plant-based glaze. Perfect for breakfast or a cozy snack, this recipe uses simple pantry staples and natural flavorings to deliver warm, comforting sweetness any time of day.

Ingredients

Scale

Dough

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm plant-based milk
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup plant-based butter, melted
  • 1 teaspoon apple cider vinegar (natural)

Filling

  • 1/3 cup plant-based butter, softened
  • 3/4 cup brown sugar
  • 2 tablespoons cinnamon (natural flavoring)
  • 1/2 teaspoon vegetarian Worcestershire sauce (natural)

Glaze

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (natural)
  • 1 tablespoon apple cider vinegar (natural)
  • 1/4 teaspoon natural gelling agent

Instructions

  1. Prepare the dough: Mix warm plant-based milk with active dry yeast and a pinch of sugar. Allow to sit 5-10 minutes until frothy to activate the yeast. In a large bowl, combine flour, sugar, and salt. Gradually add the yeast mixture, melted plant-based butter, and apple cider vinegar, then knead until smooth and elastic dough forms. Cover and let rise in a warm, draft-free spot until doubled in size, about 1 to 2 hours.
  2. Create the cinnamon swirl filling: In a bowl, combine softened plant-based butter, brown sugar, cinnamon (natural flavoring), and vegetarian Worcestershire sauce (natural). Mix until smooth and evenly blended. Set aside.
  3. Shape the buns: Roll the risen dough out into a large rectangle on a lightly floured surface. Spread the cinnamon filling evenly over the dough, covering every inch. Starting from one long edge, tightly roll the dough into a log. Slice into equal pieces about 1.5 inches thick. Arrange the pieces in a greased baking dish, leaving space between each. Cover and let rise again for 30 to 45 minutes until puffy.
  4. Bake to perfection: Preheat the oven to 180°C (350°F). Bake the buns for 20 to 25 minutes or until golden brown and fragrant. Remove from oven and let cool slightly.
  5. Prepare the plant-based glaze: While buns bake, whisk together powdered sugar, vanilla extract (natural), apple cider vinegar (natural), and the natural gelling agent until smooth and creamy. Drizzle generously over warm buns immediately after baking to seal in moisture and add sweetness.

Notes

  • Use a warm, draft-free environment to ensure optimal dough rising.
  • Allow the dough to fully double in size to get the ideal fluffy texture.
  • Spread the cinnamon filling evenly to prevent dry spots in the rolls.
  • For clean slices, use unflavored dental floss instead of a knife.
  • Apply the glaze while buns are still warm for best melting and flavor absorption.
