This hearty meal is perfect for cozy nights and busy weeknights, offering rich texture, delightful smoky notes, and versatility for various dietary preferences.

Ingredients

Scale

Pasta

  • 1 cup ditalini pasta

Protein

  • 4 slices smoked turkey bacon alternative, cut into bite-sized pieces

Sauce

  • 1 cup plant-based cheese
  • 1 1/2 cups vegetable broth
  • 1/4 cup natural grape juice
  • 1 tbsp flour
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • natural gelling agent as needed

Instructions

  1. Prepare the Ingredients: Finely chop the onions and garlic to create the aromatic base. Cut the smoked turkey bacon alternative into small strips or bite-sized pieces. Measure out plant-based cheese and liquids.
  2. Cook the Ditalini Pasta: Bring a large pot of salted water to a boil and cook the ditalini pasta until just al dente, slightly firm to hold the sauce. Drain and set aside, reserving some pasta water.
  3. Sauté Aromatics and Bacon Alternative: Heat olive oil in a large skillet, sauté onions and garlic until translucent and fragrant. Add the smoked turkey bacon alternative and cook until crispy and golden, stirring frequently.
  4. Build the Creamy Sauce: Sprinkle flour over the cooked bacon alternative and aromatics, stirring well to cook out the raw edge. Gradually whisk in vegetable broth and natural grape juice, stirring constantly until sauce thickens. Incorporate plant-based cheese, allowing it to melt smoothly and create a creamy texture.
  5. Combine Pasta and Sauce: Add drained ditalini pasta into the skillet with creamy sauce, tossing to coat thoroughly. Use natural gelling agent if needed to adjust thickness. Add reserved pasta water gradually to reach perfect consistency. Season with salt, pepper, and paprika to taste.
  6. Serve Warm and Enjoy: Serve the Creamy Ditalini Pasta warm. Garnish with fresh herbs or extra plant-based cheese if desired and enjoy the comforting dish.

Notes

  • Choose pasta wisely: small pasta like ditalini traps sauce well.
  • Reserve pasta water to loosen sauce without watering down.
  • Sauté onions and garlic slowly to bring out sweetness.
  • Use fresh plant-based cheese for a creamier finish.
  • The natural grape juice balances richness, do not skip.
