Ingredients
Scale
Vegetables and Produce
- 1 bunch fresh asparagus, trimmed and cut into bite-size pieces
- 1–2 cloves garlic, minced
- 1 fresh lemon, juiced
- Fresh parsley or basil, chopped (for garnish, optional)
Pasta and Dairy Alternatives
- 8 ounces pasta of choice (linguine, fettuccine, or penne; gluten-free if preferred)
- 1 cup plant-based cream
- 1/4 cup grated plant-based Parmesan cheese (optional)
Oils and Seasonings
- 2 tablespoons olive oil
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1 teaspoon natural gelling agent
Instructions
- Prepare the asparagus: Wash the asparagus and trim off the woody ends. Cut the stalks into bite-size pieces. Lightly sauté them in olive oil over medium heat for 3 to 4 minutes until they turn bright green and are tender-crisp.
- Cook the pasta: While the asparagus cooks, boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve one cup of the pasta cooking water before draining to help loosen the sauce later.
- Make the creamy sauce: In the same pan used for the asparagus, add a bit more olive oil and gently sauté minced garlic until fragrant. Pour in the plant-based cream, then add the vegetarian Worcestershire sauce (natural) and fresh lemon juice. Stir in the natural gelling agent to thicken the sauce slightly, then season with salt and black pepper to taste. Allow the sauce to simmer for a few minutes to combine the flavors.
- Combine pasta and sauce: Return the cooked pasta and sautéed asparagus to the pan with the sauce. Toss everything together, adding reserved pasta water as needed to reach the desired creamy consistency. Finish with a sprinkle of grated plant-based Parmesan cheese, if using.
Notes
- Cook pasta al dente to ensure a perfect texture that holds well with the sauce.
- Do not overcook asparagus; it should remain crisp to add texture and vibrant color.
- Use fresh lemon juice for the brightest flavor; bottled lemon juice won’t provide the same zing.
- Reserve pasta water to help loosen the sauce without diluting the flavor.
- Toss ingredients gently to preserve the asparagus shape and texture.
