  • Diet: Plant-based

Description

Creamy Pasta Primavera combines fresh, colorful vegetables with a luscious plant-based cheese sauce, creating a vibrant and comforting dish perfect for a quick, indulgent weeknight dinner. Fresh herbs, a splash of apple cider vinegar, and natural seasonings make this plant-based meal flavorful, creamy, and satisfying.

Ingredients

Scale

Fresh Vegetables

  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup peas
  • 2 cloves garlic, minced (natural)

Pasta

  • 12 oz pasta of choice (penne, fettuccine, or spaghetti)

Creamy Sauce

  • 1 cup plant-based cheese
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon natural gelling agent
  • 2 tablespoons olive oil

Herbs and Seasonings

  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash and chop your fresh vegetables into bite-sized pieces to ensure even cooking and good texture.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain, reserving some pasta water for later use.
  3. Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant. Add the chopped vegetables and sauté until tender but still crisp.
  4. Make the Creamy Sauce: In a small saucepan or bowl, combine the plant-based cheese, apple cider vinegar, vegetarian Worcestershire sauce (natural), and natural gelling agent. Warm gently while stirring until the mixture is silky and smooth.
  5. Bring It All Together: Add the cooked pasta to the skillet with the sautéed vegetables. Pour the creamy sauce over the top and toss well, gradually adding reserved pasta water until desired sauce consistency is reached. Finish with fresh basil, parsley, salt, and pepper to taste.

Notes

  • Reserve pasta water to thin the sauce naturally and help it cling to the pasta.
  • Add fresh herbs at the end to preserve their brightness and aroma.
  • Do not overcook the vegetables; keep them crisp for best flavor and texture.
  • Use natural gelling agent to achieve creamy texture without heaviness.
  • Adjust seasoning gradually, tasting as you go to balance flavors perfectly.
