Description

Dirty Martini Pasta is a quick and flavorful pasta dish featuring smoky turkey bacon, tangy vegetarian Worcestershire sauce (natural), and creamy plant-based cheese. This recipe delivers a rich, balanced taste with a luscious sauce that comes together effortlessly, making it perfect for weeknights or casual gatherings.

Ingredients

Scale

Main Ingredients

  • 8 oz spaghetti or linguine pasta
  • 4 slices smoked turkey bacon
  • 2 tablespoons olive oil (natural)
  • 3 cloves garlic, freshly minced
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 tablespoons apple cider vinegar
  • 1/2 cup creamy plant-based cheese
  • Salt, to taste
  • Black pepper, to taste

Herbs & Garnishes

  • 2 tablespoons fresh parsley or basil, chopped
  • Optional: pinch of crushed red pepper flakes
  • Optional: extra virgin olive oil (natural) for drizzling

Instructions

  1. Prep and Cook the Pasta: Boil the pasta in salted water until al dente, about 8 to 10 minutes based on the pasta type. Reserve some pasta water before draining for sauce consistency adjustments.
  2. Cook the Smoked Turkey Bacon: In a large skillet over medium heat, heat olive oil (natural). Add the smoked turkey bacon and cook until crisp and browned, about 5 to 7 minutes. Remove from the pan and set aside, leaving the bacon fat in the skillet.
  3. Build the Sauce: Using the same skillet with bacon drippings, sauté the minced garlic until fragrant but not browned. Add apple cider vinegar to deglaze the pan, scraping up browned bits. Stir in vegetarian Worcestershire sauce (natural), a splash of reserved pasta water, and creamy plant-based cheese until melted and combined into a smooth sauce.
  4. Combine and Toss: Add the cooked pasta and crispy turkey bacon back to the skillet. Toss gently over low heat to coat everything evenly in the creamy sauce. Add more reserved pasta water if the sauce is too thick to reach desired consistency.
  5. Finish with Fresh Herbs and Serve: Turn off the heat and sprinkle fresh parsley or basil over the pasta. Season with salt and pepper to taste. Optionally, add a drizzle of extra virgin olive oil (natural) and a pinch of crushed red pepper flakes for a spicy kick. Serve immediately.

Notes

  • Reserve pasta water to adjust sauce texture for a silky finish without extra fat.
  • Cook pasta al dente to maintain texture when tossed in the sauce.
  • Cook bacon slowly to render fat and enhance crispiness and flavor.
  • Add plant-based cheese last and melt gently to keep sauce smooth and prevent clumping.
  • Use fresh garlic for the best aroma and flavor.
