Instructions

  1. Prepare your ingredients: Finely chop the onion, carrots, and celery. Mince the garlic cloves and dice the smoky turkey bacon into small pieces. Rinse the lentils under cold water to remove any dust or debris.
  2. Sauté the base: Heat olive oil in a large pot over medium heat. Add the turkey bacon pieces and cook until crispy. Remove them and set aside. In the same pot, add the onion, carrot, and celery; sauté until softened and fragrant, about 5 to 7 minutes. Stir in the garlic and cook just until aromatic.
  3. Build the soup flavors: Return the turkey bacon to the pot. Stir in the tomato paste (natural) and vegetarian Worcestershire sauce (natural) to coat the veggies evenly. Add the rinsed lentils, fresh thyme leaves, and bay leaves, then pour in the vegetable broth. Bring the mixture to a simmer over medium heat.
  4. Simmer gently: Reduce the heat to low and cover the pot loosely. Let the soup simmer gently for 30 to 40 minutes, or until the lentils are tender but still holding their shape. Stir occasionally and add more broth if the soup becomes too thick.
