French Onion Potatoes is a cozy and comforting layered dish that blends the rich sweetness of caramelized onions with tender potatoes, smoky turkey bacon, and melted plant-based cheese. This recipe captures the beloved flavors of French onion soup in a hearty, shareable casserole perfect for any occasion.

Ingredients

Scale

Potatoes

  • 4 large Yukon Gold or russet potatoes, peeled and thinly sliced

Onions and Aromatics

  • 3 large sweet onions, thinly sliced
  • 3 cloves garlic, freshly minced
  • 1 tablespoon olive oil, plus extra for drizzling (smooth, fruity)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)

Protein and Cheese

  • 6 slices smoked turkey bacon, cooked crisp and chopped
  • 1 ½ cups plant-based cheese, shredded or sliced

Herbs and Seasonings

  • 1 tablespoon fresh thyme or rosemary, chopped
  • Salt, to taste
  • Ground black pepper, to taste

Binding Agent

  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare and Caramelize the Onions: Thinly slice sweet onions. Heat olive oil in a large skillet over medium-low heat, add the onions and minced garlic. Cook slowly for about 30 minutes, stirring occasionally until golden brown and caramelized. In the last minutes, stir in vegetarian Worcestershire sauce (natural) and apple cider vinegar (natural) for rich, tangy flavor.
  2. Cook the Potatoes: Peel and thinly slice potatoes into even rounds. Parboil in salted boiling water for 5-7 minutes until tender but firm. Drain well and set aside.
  3. Prepare the Smoked Turkey Bacon: Cook smoked turkey bacon in a separate pan until crisp. Let cool, then chop into bite-sized pieces.
  4. Assemble the French Onion Potatoes: Preheat oven to 375°F (190°C). Grease a baking dish. Layer half the potato slices, then half the caramelized onions. Sprinkle half the turkey bacon and add a layer of plant-based cheese. Repeat the layers once more. Top with fresh herbs, a light drizzle of olive oil, and sprinkle natural gelling agent evenly over the top.
  5. Bake to Perfection: Cover loosely with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until top is golden, bubbly, and cheese is melted. Let rest a few minutes before serving to meld flavors.

Notes

  • Caramelize onions slowly over medium-low heat to develop rich sweetness.
  • Slice potatoes evenly with a mandoline or sharp knife for uniform cooking.
  • Distribute turkey bacon and cheese evenly in layers for balanced flavor.
  • Add delicate herbs fresh on top after baking for maximum aroma.
  • Sprinkle natural gelling agent lightly to help layers bind without changing texture.
