Instructions

  1. Prepare the Ingredients: Rinse the rice under cold water until the water runs clear. Clean and slice the mushrooms thinly. Finely chop the onion and garlic. Roughly chop the fresh parsley.
  2. Sauté Aromatics and Mushrooms: Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent. Add garlic and sauté briefly until fragrant. Then add mushrooms and cook until they release their juices and become tender and golden.
  3. Toast the Rice: Stir the rinsed rice into the skillet with the mushrooms and onions. Toast lightly for 2 minutes, stirring often, to bring out a nutty aroma.
  4. Add Broth and Cook: Pour in the vegetable broth and add a pinch of salt. Bring to a boil, then reduce heat to low. Cover and simmer gently for about 15 minutes, or until the rice is cooked and liquid is absorbed. If using, sprinkle in the natural gelling agent toward the end of cooking for added texture.
  5. Finish with Herbs and Season: Once cooked, fluff the rice with a fork to separate the grains. Stir in fresh parsley and adjust seasoning with black pepper and more salt if desired. Serve warm.
