Instructions

  1. Prep Ingredients: Cook the smoked turkey bacon until crisp and chop into small pieces. Shred or cube the plant-based cheese. In a mixing bowl, whisk together the eggs, plant-based Greek-style yogurt, vegetarian Worcestershire sauce (natural), salt, and pepper until the mixture is smooth.
  2. Assemble Egg Bites: Evenly distribute the cooked bacon and plant-based cheese among the silicone molds. Carefully pour the egg mixture over the fillings, filling each mold about three-quarters full to allow room for expansion.
  3. Prepare Instant Pot: Pour 1 cup of water into the Instant Pot insert to create steam. Place the trivet inside the pot, then carefully set the silicone molds on the trivet, stacking if necessary while ensuring stability.
  4. Cook the Egg Bites: Seal the Instant Pot lid and select the “Steam” setting. Set timer for 8 minutes. After cooking, allow the pressure to release naturally for 10 minutes before opening the lid and removing the molds carefully.
  5. Cool and Serve: Let the egg bites cool slightly in the molds to set before gently popping them out. Serve immediately or refrigerate for later enjoyment.
