Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking and cool the pasta completely.
  2. Prepare the Smoked Turkey Bacon: While the pasta cooks, crisp up the smoked turkey bacon in a skillet over medium heat until golden and slightly crunchy. Transfer to paper towels to drain any excess fat, then chop into bite-sized pieces.
  3. Chop the Vegetables and Cheese: Dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and cube the plant-based cheese. Add all of these to a large mixing bowl along with the Kalamata olives and fresh basil leaves.
  4. Make the Zesty Dressing: In a small bowl, whisk together apple cider vinegar (natural), extra virgin olive oil (natural), garlic powder (natural), Dijon mustard (natural), vegetarian Worcestershire sauce (natural), the natural gelling agent, salt, and black pepper. Adjust seasonings to taste.
