Mediterranean Lemon Chicken Soup is a light, refreshing, and flavorful dish featuring tender chicken, fresh lemon juice, aromatic herbs, and a bright, zesty broth. This wholesome soup combines simplicity with vibrant tangy and savory flavors, making it perfect for any day and suitable for a nourishing meal or impressing guests with minimal effort.

Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs, cut into bite-sized pieces

Vegetables & Herbs

  • 2 medium carrots, finely chopped
  • 2 stalks celery, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped

Liquids & Fats

  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tbsp olive oil
  • 4 cups water or light vegetable broth
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar (natural)

Seasonings & Others

  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Natural gelling agent (optional), dissolved in water

Instructions

  1. Prepare the Ingredients: Finely chop the carrots, celery, and garlic. Juice the lemons and chop the fresh parsley and dill. Cut the chicken into bite-sized pieces or strips. Having all ingredients ready ensures a smooth cooking process.
  2. Sauté the Base: Heat olive oil in a large pot over medium heat. Add the garlic, carrots, and celery. Stir frequently and cook until softened and fragrant, about 5 minutes, to build a rich flavor foundation.
  3. Add Chicken and Liquids: Add the chicken pieces and cook until they start to brown, about 4 to 6 minutes. Pour in water or light vegetable broth, vegetarian Worcestershire sauce, apple cider vinegar, and season with salt and pepper. Bring the mixture to a gentle simmer.
  4. Simmer and Infuse Flavors: Let the soup simmer uncovered for 20 to 25 minutes, allowing the chicken to cook fully and the flavors to meld. The broth will become richer and more aromatic.
  5. Finish with Lemon and Herbs: Remove the pot from heat and stir in fresh lemon juice, parsley, and dill. Optionally, add the natural gelling agent dissolved in water to thicken the broth gently. Taste and adjust seasoning as needed.

Notes

  • Use fresh lemons and herbs for brightest flavor impact.
  • Simmer slowly to allow deeper infusion of flavors.
  • Add lemon juice and apple cider vinegar at the end to preserve their vibrant taste.
  • Use good quality extra virgin olive oil for richness and subtle fruity notes.
  • Taste and adjust salt after simmering for perfect balance.
