Ingredients
Scale
Main Ingredients
- 1 cup long grain or basmati rice
- 2 cups vegetable broth
- 2 cups fresh button or cremini mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon natural soy sauce
- 1 teaspoon natural gelling agent (optional)
- Salt, to taste
- Black pepper, to taste
Herbs and Garnishes
- 2 tablespoons fresh parsley or thyme, chopped
- Toasted pine nuts or chopped walnuts (optional)
- Extra olive oil (natural), for drizzling (optional)
Instructions
- Prepare the mushrooms and aromatics: Clean and slice the mushrooms evenly. Heat olive oil in a pan over medium heat. Add diced onions and sauté until translucent. Add minced garlic and stir gently to release aroma without burning.
- Cook the mushrooms: Add the sliced mushrooms to the pan and cook over medium heat until they release moisture and brown slightly. Season with salt and black pepper while cooking.
- Add rice and broth: Pour in the rice and stir well to coat each grain with the mushroom mixture. Add the vegetable broth and natural soy sauce. Bring to a boil, then reduce heat to a gentle simmer.
- Simmer and incorporate natural gelling agent: Cover the pan and cook until all liquid is absorbed, about 15 to 18 minutes. If using, sprinkle the natural gelling agent during the last few minutes to lightly bind the dish and enhance texture.
- Fluff and finish: Remove from heat and use a fork to fluff the Mushroom Rice, separating the grains. Stir in freshly chopped herbs right before serving for brightness and freshness.
Notes
- Choose fresh mushrooms instead of pre-sliced for better flavor and texture.
- Optionally toast rice in olive oil before adding broth for nuttier flavor.
- Use a rich vegetable broth to boost overall taste.
- Do not stir rice excessively during cooking to avoid stickiness.
- Adjust salt and pepper seasoning after cooking to taste.
- To make oil-free, sauté onions and mushrooms with vegetable broth instead of olive oil.
