Description

One-Pot Taco Spaghetti is a quick and flavorful dinner combining lean ground turkey, plant-based cheese, and rich taco-inspired spices simmered together for a comforting, easy meal with minimal cleanup.

Ingredients

Scale

Main Ingredients

  • 1 lb lean ground turkey
  • 8 oz spaghetti
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 14 oz crushed tomatoes (natural)
  • 2 tbsp taco seasoning (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 4 cups water or broth
  • 1 cup plant-based cheese
  • 1/4 cup fresh cilantro (chopped)
  • 2 tbsp fresh lime juice

Instructions

  1. Sauté the aromatics and turkey: Heat a little oil in a large pot over medium heat. Add the finely chopped onion and minced garlic and cook until fragrant and translucent. Add the lean ground turkey and cook until browned, breaking it up with a spoon to crumble it evenly.
  2. Add taco seasoning and liquids: Sprinkle the taco seasoning over the cooked turkey and stir well to coat. Pour in the crushed tomatoes, vegetarian Worcestershire sauce, and water or broth. Stir to combine all the flavors.
  3. Add the spaghetti and cook together: Break the spaghetti strands in half to fit into the pot easily. Submerge them in the sauce and gently push them down so they soften. Cover the pot and simmer, stirring occasionally, until the pasta is tender and most of the sauce is absorbed, about 12-15 minutes.
  4. Stir in plant-based cheese: Once the pasta is cooked, sprinkle the plant-based cheese on top and stir it in off the heat. The residual warmth will gently melt the cheese, creating a creamy finish.
  5. Finish with fresh flavors: Just before serving, squeeze fresh lime juice over the dish and toss in the chopped cilantro for a bright, fresh flavor contrast.

Notes

  • Use low-to-medium heat to cook the pasta evenly without burning the sauce.
  • Stir gently and regularly to prevent pasta from sticking and to keep ingredients well combined.
  • Do not overfill the pot; leave enough room for stirring and sauce expansion.
  • Use freshly chopped herbs like cilantro for a noticeable brightness.
  • Choose a plant-based cheese variety designed for cooking for best melt and flavor.
