Instructions

  1. Prepare the Peach Filling: Peel and slice the fresh peaches. In a bowl, gently toss the peaches with the brown sugar or maple syrup, cinnamon, nutmeg, vanilla extract (natural), and the natural gelling agent. Let this mixture sit for several minutes to meld flavors and thicken slightly.
  2. Make the Batter: In a separate bowl, combine the flour, baking powder, and salt. Stir in the brown sugar (natural). Cut in the plant-based butter with a fork or pastry cutter until the mixture resembles coarse crumbs. Stir in the plant-based milk and apple cider vinegar (natural) and mix until a smooth but thick batter forms.
  3. Assemble and Bake: Preheat the oven to 375°F (190°C). Grease a baking dish lightly with plant-based butter. Spoon the peach filling evenly into the dish.
