Instructions

  1. Prepare the Shrimp: Boil the shrimp in lightly salted water until they turn pink and opaque, about 2-3 minutes. Drain and let them cool before chopping into bite-sized pieces.
  2. Marinate with Lime Juice: Transfer the chopped shrimp to a bowl and pour fresh lime juice (natural) over it until the shrimp is fully submerged. Let it marinate for about 20 minutes to infuse flavor and firm the shrimp slightly.
  3. Chop Fresh Vegetables: While the shrimp marinates, finely dice the red onion, tomatoes, cucumber, and jalapeño pepper. Combine all in a large mixing bowl.
  4. Combine and Season: Add the marinated shrimp with the lime juice, chopped cilantro, salt, and pepper to the bowl of vegetables. Toss gently to distribute the flavors evenly.
