Ingredients
Scale
Shrimp and Marinade
- 500g fresh peeled and deveined shrimp
- 1 cup fresh lime juice (natural)
Vegetables and Herbs
- 1/2 cup finely diced red onion
- 1 cup diced tomatoes
- 1/2 cup diced cucumber
- 1 small jalapeño pepper, finely diced
- 1/2 cup chopped fresh cilantro
- 1 avocado (plant-based), diced
Seasonings
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the Shrimp: Boil the shrimp in lightly salted water until they turn pink and opaque, about 2-3 minutes. Drain and let them cool before chopping into bite-sized pieces.
- Marinate with Lime Juice: Transfer the chopped shrimp to a bowl and pour fresh lime juice (natural) over it until the shrimp is fully submerged. Let it marinate for about 20 minutes to infuse flavor and firm the shrimp slightly.
- Chop Fresh Vegetables: While the shrimp marinates, finely dice the red onion, tomatoes, cucumber, and jalapeño pepper. Combine all in a large mixing bowl.
- Combine and Season: Add the marinated shrimp with the lime juice, chopped cilantro, salt, and pepper to the bowl of vegetables. Toss gently to distribute the flavors evenly.
- Add Creaminess and Chill: Fold in the diced avocado (plant-based) for a creamy touch. Refrigerate for at least 15 minutes to allow the flavors to meld before serving.
Notes
- Use fresh shrimp for the best texture and flavor.
- Do not skip marinating time to ensure the shrimp is properly “cooked” and flavors blend well.
- Serve cold to preserve the refreshing qualities of the dish.
- Cut ingredients uniformly in small dice for great texture and presentation.
- Taste and adjust salt, heat, and acidity as desired.
