Description

Spinach Ricotta Pasta is a quick, nutritious, and creamy plant-based dinner perfect for busy weeknights. Combining fresh spinach, plant-based ricotta, and simple wholesome ingredients, this flavorful pasta dish offers a comforting yet light meal that is easy to prepare and enjoyed by all ages.

Ingredients

Scale

Pasta and Sauce

  • 8 oz dry pasta (penne or fusilli)
  • 1 cup plant-based ricotta
  • 3 cups fresh spinach
  • 2 tbsp extra virgin olive oil (natural)
  • 3 cloves garlic, minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1/2 cup vegetable broth
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Red pepper flakes (optional), to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook your pasta according to the package instructions until al dente. Drain, reserving about a cup of pasta water for later.
  2. Sauté Garlic and Spinach: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about a minute until fragrant. Toss in fresh spinach and cook until just wilted.
  3. Combine Ingredients: Lower the heat and add plant-based ricotta, vegetarian Worcestershire sauce (natural), and vegetable broth to the skillet. Stir until the sauce becomes creamy and well combined with the spinach.
  4. Toss Pasta and Sauce: Add cooked pasta directly into the skillet. Mix thoroughly, adding reserved pasta water a little at a time to loosen the sauce if necessary. Season with salt, pepper, and optional red pepper flakes to taste.
  5. Serve Warm: Plate immediately and enjoy your satisfying, creamy Spinach Ricotta Pasta while it’s hot and fresh.

Notes

  • Reserve some pasta water before draining; its starchiness helps the sauce cling perfectly to the noodles.
  • Use fresh spinach for faster wilting and better texture.
  • Cook pasta al dente to maintain the perfect bite and prevent mushiness.
  • Slightly warm the plant-based ricotta before mixing to help it blend smoothly.
  • Add salt and pepper gradually throughout cooking to layer flavors perfectly.
