Ingredients

Scale

Vegetables

  • 2 cups yellow squash, sliced into thin rounds
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Optional: 1/2 cup shredded carrots or zucchini (extra veggies)

Proteins & Cheese

  • 4 slices smoked turkey bacon, chopped into bite-sized pieces
  • 1 cup shredded plant-based cheese (plant-based)

Flavorings & Seasonings

  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon smoked paprika
  • Pinch of chili flakes or cayenne pepper (optional, for spice)

Binding & Topping

  • 1 teaspoon natural gelling agent
  • 1/2 cup breadcrumbs
  • Optional: 2 tablespoons crushed almonds or walnuts (for crispy topping)
  • Optional: 1 tablespoon olive oil or melted plant-based butter (plant-based) to mix with breadcrumbs

Instructions

  1. Prepare the Squash and Vegetables: Wash the yellow squash thoroughly, then slice it into thin rounds. Dice the onion and mince the garlic, preparing all vegetables for sautéing to build the casserole’s base flavors.
  2. Cook the Smoky Bacon and Aroma Trio: Chop smoked turkey bacon into bite-sized pieces and cook in a large skillet over medium heat until crisp and golden. Remove bacon and set aside. In the same skillet, sauté diced onions and minced garlic in the bacon drippings until soft and fragrant.
  3. Combine Ingredients with Plant-Based Cheese: In a large mixing bowl, combine the cooked onions and garlic with the sliced squash, crispy bacon, shredded plant-based cheese, vegetarian Worcestershire sauce (natural), and fresh herbs. Stir gently but thoroughly to mix all ingredients evenly.
  4. Add the Natural Gelling Agent and Season: Sprinkle in the natural gelling agent to help bind the casserole. Season the mixture with salt, black pepper, and smoked paprika. Optionally add chili flakes or cayenne pepper for heat if desired. Mix well to ensure even flavor distribution.
  5. Transfer and Top the Casserole: Pour the combined mixture into a greased baking dish. Evenly spread the breadcrumbs on top to create a crunchy golden crust during baking. Optionally, mix breadcrumbs with crushed nuts and olive oil or melted plant-based butter (plant-based) before sprinkling to enhance crispiness.
  6. Bake Until Golden and Bubbly: Place the casserole dish in a preheated oven at 350°F (175°C) and bake for 30-40 minutes, or until the top is golden brown and the filling is bubbly and cooked through.

Notes

  • Use firm, bright yellow squash for best texture and flavor.
  • Bake in a shallow dish to ensure even cooking and a lovely crust.
  • Season generously to bring out the natural sweetness of the squash.
  • Allow the casserole to rest for a few minutes after baking for easier serving.
  • Experiment with different breadcrumb blends or add toasted seeds for extra texture and flavor.
  • For extra crispy topping, mix breadcrumbs with olive oil or melted plant-based butter (plant-based) before sprinkling.
  • This casserole can be assembled ahead of time and refrigerated before baking.
  • Leftovers refrigerate well up to 3 days or freeze for up to 2 months.
  • Reheat in the oven at 325°F (160°C) to keep topping crisp, or microwave for convenience with softer crust.
