Instructions

  1. Prepare the Strawberries: Wash and hull fresh strawberries, then slice them thinly. Set aside a few whole strawberries for garnish later.
  2. Season and Sear the Chicken: Pat the chicken breasts dry, then season with salt and black pepper. Heat olive oil in a skillet over medium heat, and sear the chicken on both sides until golden brown but not fully cooked, about 3-4 minutes per side. Remove and set aside.
  3. Create the Strawberry Sauce: In the same skillet, add minced garlic and cook until fragrant. Stir in sliced strawberries, vegetarian Worcestershire sauce, apple cider vinegar, fresh thyme, and natural gelling agent. Allow the mixture to simmer gently, breaking down strawberries slightly to release their juices and thicken the sauce.
  4. Combine and Finish Cooking: Return the seared chicken breasts to the skillet, spoon the strawberry sauce over the top, and cover. Cook on low heat until the chicken is fully cooked and tender, about 5-7 minutes.
