Instructions

  1. Prepare Your Ingredients: Zest and juice the lemon. Finely chop garlic, rosemary, and thyme. Slice smoked turkey bacon into bite-sized pieces. Pat chicken breasts dry for even cooking.
  2. Cook the Smoked Turkey Bacon: Heat olive oil in a large skillet over medium heat. Add the smoked turkey bacon and cook until crisp and golden, about 4-5 minutes. Remove from pan and set aside, leaving the bacon fat in the skillet.
  3. Sear the Chicken: Season chicken breasts with salt and pepper. Place them in the hot skillet and sear for 4-5 minutes on each side until golden brown but still juicy inside. Remove chicken and set aside.
  4. Build the Sauce: Lower the heat. Add garlic, rosemary, and thyme to the skillet and stir until fragrant. Pour in chicken broth, lemon juice, lemon zest, vegetarian Worcestershire sauce (natural), and plant-based cream. Stir well and simmer gently.
  5. Combine and Finish Cooking: Return chicken and smoked turkey bacon to the pan. Cook together for 5-7 minutes until chicken is cooked through and sauce thickens slightly. Optionally, add natural gelling agent to thicken the sauce. Toss in fresh spinach just before serving.
