Instructions

  1. Prepare the Vegetables and Bacon: Slice the fresh zucchini thinly to ensure even cooking and softness. Cut the smoked turkey bacon into bite-sized pieces. Heat olive oil in a pan over medium heat and sauté the bacon until crispy. Remove the bacon and set aside, leaving some bacon fat in the pan for flavor.
  2. Sauté Aromatics: In the same pan with bacon fat, add finely chopped onion and minced garlic. Sauté until the onion turns golden and fragrant, allowing the natural sweetness to develop.
  3. Make the Pizza Sauce: Add crushed tomatoes, vegetarian Worcestershire sauce, fresh chopped basil and oregano, salt, pepper, a dash of olive oil, and the natural gelling agent to the pan. Simmer gently, stirring occasionally, to blend the flavors and thicken the sauce slightly.
  4. Layer the Casserole: Grease a casserole dish.
